Chongqing Hotpot

The dish the city is built around: what it actually is, how it differs from the versions you have eaten elsewhere, and how to have a good first experience rather than a memorable bad one.

It is a shared pot of spiced oil, cooked at the table, and the spice level is not adjustable in the way you are probably expecting.

  • The broth is beef tallow and chilli, not water with chilli in it. Ordering mild reduces the chilli, not the oil.
  • You order raw ingredients and cook them yourself. There is no wrong order to add things in.
  • The dipping sauce is oil-based and built at the table. It cools the food rather than adding heat.
  • Expect to smell of it afterwards. That is not a reason to skip it, but it is a reason not to schedule it before something formal.

We do not list specific restaurants with prices, because those are the facts that go stale fastest and we cannot verify them continuously.

What makes Chongqing hotpot different

The broth is the defining feature: beef tallow rendered with a heavy quantity of chilli and Sichuan peppercorn, which sets as it cools and carries flavour in a way a water-based broth cannot. It is closer to a spiced fat than to a soup.

Sichuan peppercorn provides the numbing sensation that people either love immediately or find alarming. It is not a flavour so much as a physical effect, and it is the reason Chongqing hotpot tastes different from spicy food anywhere else.

The other difference is the sauce. You build it yourself from a station of oil, garlic, coriander and condiments. The oil is not decoration: it coats each mouthful and tempers the heat.

What to order

A first order that covers the range without overwhelming anyone.

  • Beef slices

    Thinly cut, cooks in seconds. The benchmark item in any hotpot.

  • Lamb

    Common and quick-cooking, with more flavour than the beef in some shops.

  • Tripe

    The Chongqing classic. It is chewy by design and takes about fifteen seconds in the pot. Worth trying even if you are unsure.

  • Potato slices and lotus root

    Both soak up the broth. Order them early so they cook while you eat the meat.

  • Tofu skin and vegetables

    Among the best things in the pot, and most first-timers under-order them.

  • Noodles or rice

    Ordered at the end to finish the broth. Do not order them at the start.

Where to eat it

Almost anywhere in the city serves hotpot, and the difference between a good and a great one is smaller than the difference between a great one and a bad one, which is rare.

Solo travellers should know that hotpot is a group activity by default. Ordering for one is possible in some places, but a two-person minimum is common. If you are alone, a noodle shop is a better meal and equally representative.

Afterwards

Your clothes will smell of the pot. Restaurants often provide an apron for exactly this reason, and most have a sealed bag for coats.

If you eat hotpot for dinner, do not schedule anything that requires looking formal afterwards.

Common questions

Is Chongqing hotpot vegetarian-friendly?
The broth is beef tallow, so it is not vegetarian even when you only cook vegetables in it. Divided pots sometimes offer a clear broth on one side, which is a different situation. Ask before assuming.
Can I eat it if I cannot handle chilli?
With a divided pot and the non-spicy side, yes. The oil-based dipping sauce also helps, because it coats the food and reduces the perceived heat.
How much does hotpot cost?

Is the numbing sensation normal?
Yes. Sichuan peppercorn produces a genuine tingling or numbing effect that is the intended experience, not a sign of anything wrong with the food.
